Kombucha is a living health tonic that is made from the fermentation of green or black tea. The Kombucha “mushroom” or SCOBY (Symbiotic Colony of Yeast and Bacteria) reacts with sugar and tea to produce not only acetic and lactic acid but also small amounts of a potent detoxifying substance, called glucuronic acid.

Kombucha is a probiotic. Pro = in favor of; biotic = life. Kombucha balances the pH naturally.

The result can taste like something between sparkling apple cider and champagne, depending on what kind of tea you use. It’s not what you’d imagine fermented tea to taste like.

The origins of Kombucha have become lost in the mists of time. It is thought to have originated in the Far East, probably China, and has been consumed there for over two thousand years. The first recorded use of kombucha comes from China in 221 BC during the Tsin Dynasty. It was known as “The Elixir of Immortality”.

According to Traditional Chinese Medicine, Kombucha Tea is known to help balance the Middle Qi (Spleen and Stomach). It aids the stomach to help improve digestion of food and by assisting the spleen in the delivery of more nutrients. This is how the body heals itself. Kombucha helps to break stagnation, reduces damp and phlegm and expels toxins from the body. Hence the Chinese reference to kombucha tea as the Immortal Health Elixir.  It has a reputation for healing hundreds of different ailments, and is renowned as an anti-aging treatment and secret to retaining youthful looks. It is an effective chelator that removes heavy metals and a wide range of other toxins from your body. People who drink it seem to be healthier and younger-looking than the rest of the population.

Kombucha (pronounced kom-boo-cha) has been consumed for centuries in China, Japan, Korea, and Russia. In the early 1900s, use of the tea spread from Russia into other European countries including Germany, where it was touted as a health elixir for many years. In the 1950s and 1960s, German and Italian researchers claimed that kombucha tea exhibited strong anticancer properties, and it was promoted as a miracle cure for cancer.

An Alkaline-forming Beverage
When the body’s pH gets out of balance (too acidic), it causes low energy, excess weight, poor digestion, fatigue, aches and pains, and more serious disorders such as cardiovascular and heart disease, high blood pressure, high cholesterol levels, kidney stones, urinary incontinence, arthritis, osteoporosis, cancer, diabetes and obesity. An imbalanced pH can also be at the root of many common symptoms such as constipation, heartburn, headaches, frequent colds, digestive problems, acne, fatigue, and sleeplessness. Having a balanced body pH is crucial for disease prevention and to any healing or detoxification program. The majority of today’s society is acidic because of diet, stress, pollution, lifestyle, over-exercising and the accumulation of chemical and heavy metal toxins.

Although acidic in nature, through the synergism of digestion kombucha tea becomes an alkaline forming food for the body and acts to detoxify the body. The kombucha culture transforms the tea into enzymes, vitamins and organic acids. The fermented mixture contains less than 0.5% alcohol, acetic acid, gluconic acid, glycuronic acid, L-lactic acid, carbonic acid, caprylic acid, citric acid, oxalic acid, usnic acid, vitamins B1, B2, B3, B6 and B12 and C, folic acid, amino acids, and other substances with antibiotic, antiseptic and detoxifying characteristics. These all work together to help the body recover its natural healing ability. Kombucha’s combined nutrients assist the body in bringing it back to balance through detoxification and improved digestion. Once in balance, the body’s innate immune system takes over and is able to heal itself.

Lactic acid is essential for healthy digestive action, and for energy production by the liver. Acetic acid is an antiseptic and inhibitor of pathogenic bacteria.

It thickens your hair and helps with gray hair and balding. Kombucha speeds nail and hair growth.

*Rebuild: Glucuronic acid is normally produced by a healthy liver, is a powerful detoxifier and can readily be converted into glucosamines, the foundations of our skeletal system.   Glucosamines form the structures associated with cartilage, collagen and the fluids that lubricate the joints. Collagen reduces wrinkles and replenishes deficient cartilage and joint fluids in arthritis sufferers. GA is a building block for connective tissue, cartilage, stomach lining, vitreous humour of the eye and heparin.

*PH Balance: Your metabolism depends on an acid-alkaline balance that constantly responds to the food that you eat, the air you breathe, and to your emotional state. Your body has a remarkable balancing system that maintains different organs at the pH level each requires for optimum health. Toxins make both cells and organs more acidic. Your body gets rid of toxic acids by several means. Breathing makes your blood more alkaline as well as kombucha, pure water and raw fruits & vegetables. The body needs to be alkaline to be in a healthy state.

Citric acid-
helps prevent vitamin C deficiency

Lactic Acid-
Found in Kombucha in its most potent form L-lactic(+). Lactic acid is essential for the digestive system. Essential for healthy digestive action (through its derivative lactobacilli) and for energy production by the liver, and is not found in the tissues of people with cancer.

Acetic Acid-
Inhibits harmful bacteria and used as a preservative because of this action. It is also what gives Kombucha that ‘kick’ to its smell and taste.

Malic Acid-
Is also used in the body’s detoxification process, used by the liver to detoxify.

Oxalic Acid-
Encourages the cellular production of energy and is a natural preservative.

Gluconic Acid- produced by the bacteria, it can break down to caprylic acid is of great benefit to sufferers of candidiasis and other yeast infections such as thrush.

Butyric Acid- Is produced by the yeasts and when working with gluconic acid, might help combat yeast infections such as Candida.  Butyric acid produced by the yeast, protects human cellular membranes, and combined with the gluconic acid that is produced by the bacteria, strengthens the walls of the gut in order to combat yeast infections such as candida.

Nucleic Acid- Work with the body aiding healthy cell regeneration.  Nucleic acids such as RNA and DNA, transmit information to the cells on how to perform correctly and regenerate.

Amino Acid- A group of acids that are the building blocks of protein. Your muscular system is made of proteins.  Amino acids are constituents of proteins and produce important enzymes, such as glutathione a powerful antioxidant which provides protection from alcohol and pollution, and which is depleted by drug regimes.

Caffeine & Alcohol
Caffeine is cut by 1/2 the amount once fully fermented. So if an 8oz cup of black tea started out with 40mg of caffeine (about 1/3 of a cup of coffee). Kombucha tea does contain a trace amount of alcohol, less than .5%.

Begin by drinking 2-4 ounces and see how your body reacts to it. Be prepared to experience a slight reaction as your body detoxifies. Remember to drink plenty of fresh, pure water to help your body flush the toxins that are being released by the Kombucha. Consume before, during or after meals. KEEP REFRIGERATED
